Spotlight on Fredericksburg
Fredericksburg, Texas, is a charming German settlement that has preserved well its diverse history and heritage - through its spirit, its architecture, and the traditions and customs of its people.
A cultural Mecca in the Texas Hill Country, the community is surrounded by peach orchards and cattle and sheep ranches. And here, the importance of smoking turkeys is preceded only by the art of sausage making as the community's most popular pasttimes.
Founded over 150 years ago, the establishment of the community was the master plan of German noblemen. The community was officially founded May 8, 1846, by under the auspices of the Society for the Protection of German Immigrants in Texas.
The Commissioner General of the Society, also known as the "Adelsverein," was Baron Ottfired Hans von Meusebach, a German nobleman who took the name of John O. Meusebach once he settled in Fredericksburg. He was a skilled and capable man in handling the affairs of the colony, and was diplomatic in dealing with the Indians.

Annual October Fest and Night in Old Fredericksburg are just two of many annual celebrations that honor the german heritage of the community. So rooted is the community in its heritage that it is still common to hear conversations in german over the table at the local coffee houses and cafes.
 And when talking turkey, Fredricksburg has a history with the subject. Not only is the area populated by large flocks of native wild turkeys, a popular bounty for the thousands of hunters attracted to the area each autumn, but before a fire destroyed the plant in 1999, Fredericksburg was the capital of smoked turkeys with more birds smoked and sold by the Sunday House Turkey plant than by any other single supplier in the world.
Turkey farms still dot the countryside around Fredericksburg, and the bird is a popular dish in the local cuisine; smoked, baked, whole-fried, deboned, cured, sliced and prepared in a dozen other ways, including as a filling for locally-made tamales.
Primary to it popularity as a tourist attraction, Fredericksburg offers country charm, abundant bed and breakfast inns, quaint cultural shopping, a variety of german restaurants and bistros, abundant outdoor activities and ample local museums and points of interest, just to name a few.
